Only maximum ripe cherries are selected using a refractometer and Brix to sort ripeness. This lot then undergoes a two-stage fermentation process. In phase one temperature is controlled and anaerobic fermentation promoted for 40 hours. In phase two the fermentation is allowed to continue aerobically and in controlled temperature for a further 60 hours.
Cherries are then dried on raised African beds until a moisture content of 11% is reached. We find this creates a clean but exceptionally sweet and sticky cup with complex and fruit forward wine gum-esque body.
Tastes like: Strawberry Jam. Biscuit. Sticky.
Roasted for filter.
