The El Vergel Estate

2018 marked a milestone for El Vergel. Twelve years after planting their first coffee trees, Martha Montenegro and her sons Shady and Elias Bayter kicked off work to understand how controlled fermentation could increase the quality of their harvested crop.

Fast forward six years to 2024 and the Bayter brothers have become synonymous with coffees that exhibit remarkable sensory qualities, driven by pioneering extended fermentation methods.

We can vouch for their burgeoning reputation – we’ve enjoyed a number of showstopping El Vergel lots in recent times. From Pacamaras that have reminded us of freshly-squeezed orange juice, to Sidras that taste as much like herbal tea as they do coffee, to Bourbons oozing rich dark chocolate notes.

The range of flavours and textures on offer from this estate is arguably unmatched across Colombia’s coffee-producing regions. What’s the reason for this?

There are three key variables:

  • El Vergel’s diversity of topography and therefore microclimates.
  • The biodiversity and health of surrounding forests and their contribution to the composition of the microbiome in which the estate’s coffee plants are grown.
  • Research and development in intentional, consistent, scalable post-harvest fermentation processes.


This specific coffee – named so due to its position on the farm surrounded by banana and guava trees - is a demonstration of the potential in matching El Vergel’s optimum growing conditions with the very latest in processing innovation.

In the cup we’ve enjoyed deeply rich red fruit flavours, heightened sweetness and a notably weighty texture.
