About us

We're a London coffee roaster motivated by innovation and the re-evaluation of the potential of coffee to create value at every point in its journey.

We believe that the input of each individual grows the whole and we work closely with leading coffee-focused businesses in the UK and beyond to explore new possibilities in the world of flavour, as well as how the value of premium coffee can be communicated more effectively.

We're a small team, based in Brixton, south London and you are always welcome to visit us.

Our commitments

The curation of our coffee catalogue is driven by purpose and impact. Every coffee is sourced with the ambition to create value for stakeholders and surface more sincere narratives for the speciality movement. Our partnerships with producers are founded on collaboration at origin across multi-year projects.

And we are proudly B-Corp and Carbon Neutral certified. We roast on a Loring S15 Falcon and a Loring S30 Kestrel - two of the most energy-efficient roasters on the market.

We believe that real value creation - through high-quality incentives and partnerships - holds stakeholders to greater accountability to the virtues of the specialty industry.

The seasonal Assembly House Espresso is the clearest demonstration of the value we aim to create for specialty coffee industry stakeholders, and the sincere narratives we highlight for the specialty movement. We source our House Espresso to celebrate the diversity of coffee. We source it to define what quality coffee is, and what that means to everyone involved.

By rotating the coffee throughout the year, we make accessible multiple premium coffees at competitive prices. And by working closely with the same producers over multi-year contracts, not only do we deliver consistent impact, we’re constantly refining and improving to dial in on the formula for the perfect espresso.

How the catalogue works

The objective of flavour descriptions in the specialty coffee industry is to highlight the unique flavour characteristics of coffees based on their provenance, variety and how they were processed after harvest.

Our weekly wholesale email keeps you in the loop with new coffee releases, news from the roastery and any other updates we reckon you’ll want to hear about.

Collaborative events

We’re always looking to collaborate with our wholesale partners - celebrating our work together and engaging your customers. The format of these will always be led by what you believe will give you and your community the most value, and so we are totally flexible in format and theme.

Examples of successful events include, but are in no way limited to:

  •  — Talks led by Assembly on the ever-changing landscape of the specialty industrury.
  •  — Brewing workshops hosted by Head Roaster and reigning UK Barista Champion Claire Wallace
  •  — Barista competitions
  •  — Cuppings of our latest limited edition coffees.

Dialling in espresso video
Our method for optimising espresso focuses first on clarity and texture, followed by balance. We adjust our beginning brew ratio slightly if we're using a coffee that exhibits qualities different to our ideal, but the framework always remains the same.

Our approach to the method uses a fine grind and fast brew method to enhance sweetness, avoid astringency and ultimately optimise clear expression of taste in the final cup.
