Assembly Fruit Fermentation Series
Introducing the Assembly Fruit Fermentation Series - the latest of our limited edition coffees, featuring three dry anaerobically fermented Pink Bourbon lots from Jairo Arcila's Finca Villarazo. All three coffees are exposed to wine yeast and then orange rind, strawberry, and passion fruit respectively.
Each pack includes 100g each of:
Orange — ( Wine yeast / Orange fermentation )
Strawberry — ( Wine yeast / Strawberry fermentation )
Passion fruit — ( Wine yeast / Passion fruit fermentation )
A third-generation coffee farmer, Jairo purchased his first farm in 1987 and over three decades added another five (with Villarazo the first of these) to his portfolio. In 2014 he became one of two farmers in the region to plant Gesha trees. Full of confidence after a fruitful first harvest he then planted Pink Bourbon trees, again with great success.
Alongside coffee, Jairo also grows a plethora of fruits that he sells locally. When the Covid-19 pandemic hit, demand disappeared and he began using the fruits for processing experimentation. Safe to say it's been a resounding success - these remarkable coffees are unlike any we've tasted before.
We've found all three coffees to pose a cup that's floral on the nose, full of layered, powerful fruits and with a subtle chocolate sweetness.
