Fazenda Mio
With Fazenda Mio, the Pellicer family have made a big impression on us over the past few years. Mio has become synonymous with consistently high-quality espresso coffees that never fail to celebrate the archetypal characteristics of Brazil's crop - think rich chocolate and sweet nut flavours, balanced acidity and round body.
Recently, the Mio team has collaborated with leading fermentation research scientist Professor Lucas Louzada on a number of pioneering projects focusing on affecting the sensory characteristics of multiple coffee species and varieties.
Applying proven methods to Mio's own harvest, this lot of Mundo Movo cherries has been processed using a custom-made bioreactor. The bacterial diversity driven by a 96-hour, temperature-regulated fermentation interacts with the natural microorganisms of the cherries to produce a flavour profile markedly different to classic Brazilian coffees.
This lot has prominent notes of tropical fruits, paired with qualities redolent of tannin-forward beverages - think black tea and red wine. A really remarkable coffee.
