This lot undergoes a carefully controlled fermentation and drying process designed to enhance those qualities while adding depth and complexity.\u003c\/p\u003e\n\u003cp\u003eThe coffee is carefully handpicked and floated to remove lower-density cherries before undergoing a series of controlled fermentation stages. It first ferments naturally for 14 hours in open tanks, followed by an 18 hour double fermentation in closed tanks before being pulped and left to ferment aerobically for a further 72 hours.\u003c\/p\u003e\n\u003cp\u003eAfter fermentation, the coffee is mechanically dried for 3–5 days at 38 degrees celsius.
