Juan Saldarriaga is the main producer for his two farms, El Encanto and La Claudina, as well as several local smallholdings. Through experimenting with different cultivars at different levels and experimental drying processes, on his own farm and this neighbours, Saldarriaga is working to show that the Antioquia region doesn't just produce heavy-bodied coffees.
