Bookkisa
Another year, another another excellent lot from Sookoo Coffee. Established in 2018, Sookoo is a family-owned company based in the South of Oromia Mountains of Ethiopia that produces and exports high-quality coffee from surrounding kebeles (villages).
This particular lot is a mix of two varietals - Gibirinna 74110 and Serto 74112 from the Bookkisa kebele. Once ripe and picked, the cherries were sorted and then immediately spread out thinly on raised African beds for 15-20 days until the desired moisture content was achieved.
The result is a clean, complex flavour profile with prominent aromatics and low acidity. Surprising characteristics for a naturally-processed coffee. We've tasted plenty of stone fruits, with heady floral aromas. Delicious.
