Near Cabañas, in the south-west of Honduras close to its El Salvadorian border, Rosalina was born into a family of farmers. Always close to the land, Rosa's experiences centred around the corn, beans and cattle farmed by her family but a few years ago embarked on a new venture when she purchased a 2 hectare plot to plant coffee. In just a few years both production and quality of the farm have developed rapidly and Rosalina's current plans are to build a house on the property to invest more time on site not just during harvest but across the year.
Upon picking cherries are immediately passed to oxygen free tanks whee they undergo an initial 72hr anaerobic fermentation. Once complete the cherries are de-pulped before being transferred to raised African beds along with the separated for a 20-25 day natural drying process that intensifies and elevates the natural sweetness of this IH-90 lot.
In the cup we find this coffee is defined by an elegant, syrupy and silky texture. Prominent sweetness accompanies this mouthfeel in the form of red fruits which carry the flavour effects of fermentation to create a cup of character, fun and refinement.
