We invite people we work with to taste coffees before they're released, to help define the tasting notes that inform the brush stroke illustration for the coffee. For this coffee we invited Skinny Dip Coffee. Skinny Dip is an independent coffee shop based in Margate that prioritises working with female business-owners and, in their own words, 'bad-ass female farmers'. Step forward Maria Damaris Medina and her farm Santa Elena.

Santa Elena

Named after the farm on which it's grown, Santa Elena is one of the most impeccable expressions of a bright, clean, washed Colombian coffee we’ve encountered in recent years. Subtle nuances in the inherent acidity of coffees from across Colombia’s coffee-growing regions are determined by both terroir and climate. We find lime acidity in coffees from the Narino region, grape acidity in coffees from the Tarqui region and a lemon acidity in coffees from the Huila region - home to Maria and Wilson’s farm on the slopes of the Andes Mountains.

In addition to the lemony acidic qualities of coffees grown in this specific region, the Caturra varietal itself is prized for its bright acidity and we’ve roasted Santa Elena lightly so this shines through in a remarkably clean cup. Notes of dates and cherries balance the citrus front end for an exquisite example of a washed Colombian coffee.

Method 

As with the majority of our coffees, this coffee can be brewed as espresso and as filter. The inherent brightness lends itself to the pour over method, and particularly the Orea Brewer. It will also pose an excellent cup with all other filter brewing methods.

Things will get very interesting if you're up to the challenge of brewing Santa Elena on espresso - we recommend upping the dose of coffee to achieve more body, then running the yield longer than usual to temper the natural acidity and promote the clean fruit notes within. A real palette twister.
