Elevated Brewing: El Vergel Giant Pacamara

Finca El Vergel is one of the oldest and largest farms in the Tolima region of central-western Colombia. The sheer size of El Vergel means Elias and Shady Bayter have ample opportunity and space to apply their expertise to multiple innovative harvest and post-harvest processing methods. Safe to say, over recent years they've created quite the reputation for coffees with remarkable flavour profiles.

For El Vergel's Giant Pacamara, 5,500 Pacamara trees were planted in 2016. Once the cherries reached full maturation, they were picked and then immediately placed in air-tight steel tanks for a 60-hour natural fermentation. After, they were removed for slow drying, still in cherry, on raised beds.

Three further resting phases in GrainPro coffee sacks followed, allowing the coffee to develop an extraordinarily complex flavour profile. This is one of the fruitiest lots we've tasted, and further proof that Colombia is home to some of the world's very best coffee. And in Elias and Shady, two of the world's most talented producers.
