Assembly x Alex Delany
Alex is well known as host of Sound Radio, former Drinks Editor and host of Bon Appetit's Which is Best and Eating Everything On the Menu series as well as all-round beverages, sounds and food aficionado. Our paths crossed at Assembly however when we discovered that he's also an obsessor over, expert in and appreciator of the nuances of naturally processed coffees. When the opportunity arose to source the exotic varietals and experimental fermentations of the Daterra Masterpieces we thought of Alex as the obvious choice for a co-release.
The design, packaging, flavour descriptors and on-pack copy were all created collaboratively and the coffee bags are made from true bio sustainable materials.

Each year Daterra scour their farms for the most exceptional and unique lots of coffee - considered 'Masterpieces.' The very small farm serves as a lab for new varietals, processing experiments and ultimately innovation.
Aramosa is a 'pre-cultivar' meaning that its genetics are still being studied. It is known however it is a hybrid between Coffea Arabica and the lesser known, comparatively lower in caffeine, Coffea Racemosa. The lower levels of caffeine produce a perceivably sweeter cup that allows delicate fruit notes to take unique prominence in a cup defined by tropical passionfruit, pomegranate and dark chocolate.
The cherries are fermented in an open tank with no added yeasts to promote a wild/ natural fermentation.
Arara is a natural hybrid between Obata and Yellow Catuai which produces yellow ripe coffee cherries. The cherries are fermented inside a tank with a one way valve to avoid gases entering while allowing the CO2 created in fermentation to 'push out' the relatively lighter and create an environment absent of oxygen i.e anaerobic.
The anaerobic environment means only certain microbes can exist with the absence of oxygen and leads to a very precise cup and clearly identifiable tasting notes. We found prominent flavours or ripe strawberry and marzipan with a soft enveloping body.
