This coffee was shared with us by Colombian coffee exporters Cata Export, and is the work of Anibal Plazas and the Hernandez family at Los Nogales, high up in the mountains of Huila in the southwest of the country.
Fifth-generation producers, the Hernandez’s extensive knowledge of the local climate and soil characteristics is complemented by Anibal’s expertise in executing new post-harvest fermentation processes.
After harvest, this lot was washed clean of its mucilage before being processed with a lactic fermentation (one of the oldest fermentation methods, anaerobic, historically used to preserve foods) in water. The cherries were then washed again before being mechanically dried for four days.
In the cup, we’ve tasted plenty of sweet strawberry and bright lime peel flavours, with a pronounced stickiness of texture. Coffees grown in Huila often present wonderful fruitiness with balanced acidity, and this one is no different.
