Alex Arango and La Colmena
The creator of this coffee, Alex Arango, is a member of the Red Association - a collective of producers from across the Caldas region. The name of Alex's farm - 'La Colmena' translates into English as 'beehive' - a reference to the abundance of bees that pollenate his gesha trees during flowering season.
Post-harvest process
- Coffee floated in water to remove unripe and defected cherries
- In-cherry fermentation for 24 hours
- Transported to the Red Association's processing station, Jamaica
- A further 48-hour in-cherry fermentation
- Dried on raised beds in greenhouse for 15 days
- Dried in a mechanical drier for 3-4 days
- Prepared for export.
