Moises Chaguala and El Vergel
This is the latest coffee sourced through Shady and Elias Bayter and the El Vergel Estate. Renowned producers in their own right, the Bayter brothers created the Estate to showcase the best coffees from other producers in the region. They prioritise unique flavour profiles, rare varieties and progressive farming practices.
A third-generation farmer, Moises Chaguala has built himself a reputation for producing consistently high-quality lots. His farm Finca La Maria sits high up at 1600masl, creating conditions ideal for cultivating super dense, sweet coffee cherries.
This specific lot is a Bourbon Aji varietal – newly discovered in Colombia and similar in genetics to Ethiopian landrace varietals.
In the cup we’ve been tasting plenty of tropical fruits, with aromas of cherry blossom and peach, and a seriously juicy texture.
