DR Congo — Muungano Best of Congo 102

Fully washed, in the cup this coffee offers juicy stone-fruit notes, bright citrus flavours and a perfectly clean finish. Unsurprisingly given the Muungano Cooperative’s proximity to Rwanda’s coffee-growing regions across the border, its comparable in profile to many excellent Rwandan coffees we’ve purchased over the years.

Grind Settings

Kinu M47 Classic

  • Set dial to zero
  • Turn two and three-quarter turns
  • Grind slightly coarser for naturally-processed coffees

Recipe

Pour Over (flat-bottom)

- Brew Ratio - 15g to 255ml (1:17)

- Brew Time - 2:15-2:45

- Water Temp - 98°C

- Bloom - 50g, 30 seconds

After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.

Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

The Producer

In the hills above Lake Kivu, Muungano - “togetherness” in Swahili - is a cooperative of over 4,300 smallholders, more than 40% of whom are women. In a region where community structures are often the only constants, the name represents the coop’s foundational commitment to progress shared across multiple demographic groups. 

Since its founding, Muungano has championed equity, traceability and quality, helping to build lasting livelihoods for members and their families. This specific lot placed second at this year’s inaugural Best of Congo competition – an initiative created by Assembly, Keynote Coffee and local Congolose coffee cooperative leaders to share their exceptionally high-quality coffees with a global audience.
