Colombia — Finca Los Nogales x Cata
This lot is shaped by post-harvest techniques developed in collaboration between Los Nogales, where the coffee was grown and processed, and Cata Export, who developed the technique – a partnership focused on pushing quality forward.
The coffee begins with a 72-hour oxidation in the cherry, allowing controlled exposure to oxygen for early flavour development. The cherries are then pulped, leaving the mucilage intact and sealed in tanks for a 36-hour, anaerobic fermentation, that builds on the existing flavour. A light wash follows, removing some (but not all) of the mucilage before drying, halting fermentation.
The result is a decadent cup, with rich, jammy notes.

Grind slightly coarser for naturally-processed coffees
After bloom, pour to 150g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Pour quickly, carefully and in a circular motion.
Tip: Pour slowly during the bloom to extract maximum flavour.

La Esperanza – meaning hope – is the 1.5 hectare farm where third generation coffee producer Fidel Huancas is focused on growing coffees that stand among the best in the region.
The land was inherited from his father and in the last five years Fidel has been replacing the farm’s original Catimor and Pache varieties with Yellow Caturra – a cultivar that performs exceptionally well in the high altitude terroir of northern Peru, delivering both strong yields and high cup quality.
Like many producers in the region, he’s part of a new wave of farmers driving remarkable improvements in cup quality – supported by progressive cooperatives and local export organisations working closely in the field.
