This SL28 is naturally processed, with a 48-hour anaerobic fermentation playing a key role in developing its depth of flavour.
Ripe cherries are harvested, floated and sorted before being placed in sealed tanks, where the controlled fermentation builds richer fruit character while retaining SL28’s signature clean profile. The cherries are then slowly sun-dried on raised beds for 20–30 days, turned regularly to ensure even dehydration and prevent over-fermentation.
The result is a distinctly tropical expression of SL28: ripe mango, butterscotch sweetness and a rounded, creamy mouthfeel.

After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.
Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

Maria Rodriguez produces this coffee alongside her brother Linarco at Betania Farm in Palestina, Huila, where the Rodriguez family have been farming for three generations. Maria and Linarco are part of a wider family operation spanning seven farms, working some of the most fertile and biodiverse soils in southwest Huila.
Betania Farm, at 2,000 masl, is part of a network of 117 smallholder producers who share professional drying facilities, a cupping laboratory and centralised warehouses. Through sharing processing infrastructure, each producer is able to control the quality of their coffee without losing the identity and traceability of individual lots.
That combination of careful processing and high-altitude growing conditions gives this coffee its particularly vivid character: tropical fruit, concentrated sweetness and a texture reminiscent of mango and cream.
