DR Congo — Sopade Best of Congo 104
Fully washed Brazilian coffees are something of a rarity. Processing washed coffees requires abundant water but the relatively low elevations of Brazil’s coffee-growing regions typically receive less rainfall and have higher air temperatures than similar regions across other producing countries.
These dry conditions lend themselves to naturally-processed coffees that need minimal water during the post-harvest treatment. Hence why most Brazilian lots are natural or pulped natural (semi-washed).
Bucking the prevailing trend, Espírito Santo-based producers Sivanius and Laudivanea Kutz are producing fully washed coffees that spring a surprise in the cup. And while this 256 lot has retained the rich texture you’d expect of a high-quality Brazil, it has a perceptible acidity and fruitiness you wouldn’t.

Grind slightly coarser for naturally-processed coffees
After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.
Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

Sopade was formed in 2017 by a group of smallholder farmers with previous experience in larger cooperatives. Their aim was to build a new model for Congolose coffee cooperatives rooted in equity, transparency, and community ownership. Today they have 818 members, 207 of whom are women, and their network spans over half a million individual trees.
This specific lot was selected as one of the winning coffees at this year’s inaugural Best of Congo competition – an initiative created by Assembly, Keynote Coffee and local Congolose coffee cooperative leaders (including Sopade’s Mike Mobali Kaboyi) to share their exceptionally high-quality coffees with a global audience.
