In Good Company — Mains

A new series exploring the people and places behind the company we keep.

Our first chapter takes us to Brussels. 

In a quiet corner of Etterbeek, the team at Mains are making some of the city's most considered sourdough bread and bakes.

Loaves line the counter, alongside a changing selection of viennoiserie – slow-fermented interpretations of the classics, pillowy-soft babka and, as lunchtime rolls around, freshly made sandwiches.

From heritage-grain flour to milk, Mains keeps its sourcing close to home, celebrating the many hands that shape what ends up on the counter. Fittingly, mains is ‘hands’ in French.

Bakes may be at the heart of Mains, but coffee has always been part of the picture. The connection runs deep: Mains' ‘Head Bread Lady’, Senina Cojocari, helped lay the foundations during Assembly's early years before co-founding Brussels roastery Wide Awake. She went on to open the first Mains in Uccle in 2022, followed by the larger Etterbeek outpost in 2025.

Alongside their house espresso, Mains rotates coffees from roasters around the world – including selected releases from our own catalogue.
