Colombia — Cata Pacamara

The post-harvest methods applied to the lots that make up this coffee are low-resource, high-impact techniques replicable by multiple producers working in a diversity of environments.

Once harvested the Cata Pacamara was fermented in cherry (the beans still encased in their mucilage) for close to five days. The mucilage was then removed from the beans before another 24-hour fermentation and a final wash to finish the process.

The result is a cup smooth and rich. Expect flavours of fudge, spiced rum and mandarin. A coffee designed to be dual purpose – a delicious experience brewed as filter and as espresso.

Grind Settings

Kinu M47 Classic

  • Set dial to zero
  • Turn two and three-quarter turns
  • Grind slightly coarser for naturally-processed coffees

Recipe

Pour Over (flat-bottom)

- Brew Ratio - 15g to 255ml (1:17)

- Brew Time - 2:15-2:45

- Water Temp - 98°C

- Bloom - 50g, 30 seconds

After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.

Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

The Producer

This Pacamara is a blend of lots from a small group of producers in Salado Blanco, Huila – each farming around 1.5 hectares of land. Through a partnership with Cata Export, these producers receive ongoing support and advice tailored to their specific needs – from soil health and clean agriculture to guidance on post-harvest practices and sensory evaluation.

The primary objective of Cata’s participation with this community is simple: to bring visibility and opportunity to producers who haven’t traditionally had access to specialty markets.

By building quality at origin through this initiative and other similar projects, Cata generates more value for all stakeholders in the supply chain, building a reputation as one of the most progressive coffee groups operating today.
