This Colombian Yellow Papayo lot comes from a close collaboration between esteemed producer Nestor Lasso and influential sourcing group Cata Export. Grown at Nestor’s farm El Diviso in Huila and processed with a multi-step fermentation approach assisted by baker’s yeast and the thermal shock technique, the result is a coffee that’s bright, sweet, and deeply characterful.
Expect syrupy body, prominent tropical fruit notes and a clean finish. It’s a distinctive cup reflective of its post-harvest processing, and a demonstration of the potential of Nestor and Cata’s burgeoning partnership in producing high-quality, high-value coffees.

Grind slightly coarser for naturally-processed coffees
After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.
Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

Cata founders Catalina Gutiérrez and Pierre Fargetton first met Nestor Lasso during a coffee sourcing trip in 2019 to Bruselas – a small town high up in Colombia’ prolific growing region of Huila.
