Ethiopia — Rumudamo Anaerobic Washed

Highly complex and full of character, this coffee is a showcase of the sky-high flavour potential of one of the world’s most celebrated origins. 

While this is technically a washed coffee, a 96-hour anaerobic (oxygen-free) fermentation beforehand has produced an element of depth and texture you’d often associate with naturally-processed lots. 

Add in a perceptible complexity in the cup and it’s obvious the slow, controlled breakdown of sugars during fermentation has left its mark. This is coffee full of tropical fruits, sticky textures and a balanced finish. 
Grind Settings

Kinu M47 Classic

  • Set dial to zero
  • Turn two and three-quarter turns
  • Grind slightly coarser for naturally-processed coffees

Recipe

Pour Over (conical)

- Brew Ratio - 15g to 255ml (1:17)

- Brew Time - 2:25-3:15

- Water Temp - 96°C

- Bloom - 50g, 30 seconds

After bloom, pour to 150g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Pour quickly, carefully and in a circular motion.

Tip: Pour slowly during the bloom to extract maximum flavour.

The Producer

Founded in 2006 by brothers Asefa and Mulugeta Dukamo, Daye Bensa is a coffee exporting company rooted in Southern Ethiopia. One of their most celebrated sourcing regions is Rumudamo - a small community tucked into the highlands of Arbegonna, in the Southern Nations, Nationalities, and Peoples' Region. 

At 2,200 metres above sea level, Rumudamo sits among the highest coffee-growing areas in the country.  

Around 600 smallholder farmers grow the 74112 variety across 840 hectares of land, delivering their harvest to the local station. The altitude of these smallholders naturally slows the ripening of the cherries, helping sugars develop slowly and adding depth to the final cup. 

It’s a place that’s built its name on quality. In 2020, coffees from Rumudamo placed both second and third in Ethiopia’s Cup of Excellence - a reflection of the work, care, and environment that define this area.
