This Catuai lot is processed as a natural, meaning the cherries are dried whole, with the fruit left intact around the seed. After harvest, the cherries are sorted, weighed and transported to the wet mill, before undergoing a 96-hour fermentation in GrainPro bags.

After bloom, pour to 100g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Again, pour quickly, carefully and in a circular motion.
Tip: Swirl brewer a few times during bloom to encourage saturation of coffee bed.

Gildardo Contreras’ connection to coffee began in childhood, picking and processing cherries from the Bourbon trees his parents grew in their back garden. In 2012, he purchased Finca Gascón, gradually expanding the farm from mixed avocado and coffee production into a 54-acre project focused on specialty coffee.
Today, the farm is managed by Gildardo’s son, Felipe, whose work centres on quality, experimentation and continual improvement. Alongside refining the farm’s own production, Felipe works with neighbouring producers to strengthen processing techniques across the area. This same progressive approach extends to the farm’s agronomy, where natural remedies are used to manage disease pressure, and ongoing renovation is helping prepare the farm for the future.
