This coffee has been processed using the double-soak method – a technique commonly used across East Africa, and particularly associated with Kenya.
After the coffee has been depulped, fermented and washed to remove the mucilage, it is submerged again in fresh water before drying. This additional soaking helps remove any remaining organic material and further stabilises the coffee, a practice closely linked to the clarity and structure Kenyan coffees are known for. In the cup, it typically enhances flavour while contributing to a slightly silkier texture and a clean, juicy finish.
The lot is a mix of SL28 and SL34, the two varietals most closely associated with Kenya’s classic cup profile. Both are known for producing coffees with bright acidity, structured fruit and a pronounced juiciness. While Kenyan coffees are often recognised for darker berry notes like blackcurrant or blackberry, this lot has brighter fruit notes of citrus.

After bloom, pour to 150g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Pour quickly, carefully and in a circular motion.

This coffee is sourced from smallholder farmers in Nyeri County, a world-renowned coffee-growing region in Kenya. High elevations, rich volcanic soils and cool temperatures create ideal conditions for slow cherry development, contributing to the bright acidity and fruit character the area is known for.
This lot comes from family-owned farms surrounding the Muthuaini Factory (wet mill) in Nyeri County. The factory is managed by the Mutheka Farmers Cooperative Society, which was established in 2004 and now represents around 6,000 farmers across the region. Members typically cultivate around 200 coffee trees on half-acre plots, a scale that allows producers to focus on selective harvesting and deliver only ripe cherries to the mill.
