A low-intervention process, classic for this area of northern Peru. After picking, cherries are rested for between 24-40 hours (depending on air temperatures during the process) before being pulped and fermented in bags for a further 24 hours. The beans are then washed twice and dried for around 30 days.
The result is a cup with prominent sweetness, acidity and berry notes. It’s an excellent example of the coffees to be found in a region with vast and untapped potential in quality.

Grind slightly coarser for naturally-processed coffees
After bloom, pour to 150g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Pour quickly, carefully and in a circular motion.
Tip: Pour slowly during the bloom to extract maximum flavour.

Griselda Nimia Rioja Tarrillo grows coffee in the remote village of Perlamayo, high up in the Huabal district. Griselda and her family oversee two neighbouring plots – El Barejon and La Piedra. Coffees from both are processed together at the family’s washing station.
Coffee-producing infrastructure in this area of the country is some of the least-developed across South America’s growing regions and this has contributed to a scarcity of high-quality lots making it out of the country.
In recent years, established green coffee exporter Falcon Coffee has invested heavily in local infrastructure and producer cooperatives to improve access and quality across the region.
Falcon’s presence in Peru has done much to introduce producers to the global coffee market and their partnership with Griselda is demonstrative of their positive impact in the country.
