This lot follows a controlled, multi-stage approach. After selecting only the ripe cherries, they undergo a 48-hour anaerobic fermentation, with strawberries introduced during this stage to influence the overall profile. Following fermentation, the coffee is pulped, washed and dried over eight days.
The use of assisted fermentation here is deliberate – building on the inherent structure of Castillo varietal while introducing an intensely fruit-forward profile, without compromising clarity or balance.

After bloom, pour to 150g. Pause until the waterline hits the coffee bed and then repeat three more times to 250g. Pour quickly, carefully and in a circular motion.

Jairo Arcila is a third-generation producer based in Quindío, one of Colombia’s most established coffee-growing regions, where he manages several farms including Santa Monica, his largest holding. Sitting between 1450–1500 masl, the region’s combination of volcanic soils, steady rainfall and moderate temperatures provides ideal conditions for coffee production.
His work combines long-standing agricultural knowledge with a more recent focus on post-harvest innovation, particularly fermentation. By using advanced techniques and the introduction of external inputs during processing, Jairo has developed a range of profiles that challenge more traditional expectations of Colombian coffee, while maintaining a clear focus on quality and repeatability.
