Recipes: Coffee Cocktails — Claire Wallace CIGS 2025

Claire's Competition Creations

After winning the 2022 SCA UK Barista Championship and taking home 3rd place in the World Championship of the same year, Assembly Head Roaster Claire Wallace had her sights set on the UK Coffee In Good Spirits (CIGS) Championship.

As a first-time participant in this year's competition, Claire secured second place with her 'Side by Side' designer cocktail using our Sebastian Ramirez White Honey Geisha, and an Irish Coffee recipe featuring our Nestor Lasso Ombligon 2024.

We asked Claire to give us the lowdown on both serves, so you can replicate in the comfort of your own home. Enjoy.

'Irish' Coffee

  • A fruit-forward, rich and decadent Irish coffee 

  • Tastes like — Malt Loaf + Banana + Rich


Ingredients (serves 2)

  • 400g pour over coffee: Colombia — Nestor Lasso Ombligon
  • 45ml Compass Box Crimson Casks Whisky 
  • 5ml Loch Lomond Unpeated Single Grain Whisky
  • 25ml light brown sugar syrup
  • 10ml Ivy House double cream.

Methods

  • Pour over: brew with 38g dose and 400g yield in 2 minutes 30 seconds
  • Light brown sugar syrup: dissolve light brown sugar in water at a 2:1 ratio.

How to Build and Serve

  • Add the two whiskies and sugar syrup to the brewed coffee and stir well
  • In a separate closed vessel, shake cream to a thick consistency
  • Divide coffee, whisky and sugar base equally into two preheated Irish Coffee glasses
  • To finish, pour cream over the back of a spoon so that it rests on top
  • Enjoy.

'Side by Side'

 

  • A fresh aperitif-style cocktail, inspired by the classic Sidecar

  • Tastes like — Orange + Oaked Chardonnay + Juicy

Ingredients (serves 2)

Methods

  • Espresso: brew with 20g dose and 40g yield for 22-23 seconds of extraction, then chill or wait until cool
  • Apricot-infused cognac: steep 36g of dried apricots in 200g of the cognac for 36 hours)
  • White simple syrup: dissolve white sugar in water at a 2:1 ratio
  • Salt solution: dissolve salt in water at a 10:1 ratio.

How To Build and Serve 

  • Add all ingredients - including cooled espresso - to a cocktail tin
  • Fill the tin with ice and shake vigorously
  • Fine strain into 2 coupes
  • Garnish with citrus peel or citrus flower
  • Enjoy.
